    Talking Something for breakfast...

    Scrambled Eggs with Pepperonata Sauce and Roasted Potatoes

    Sweet peppers and fresh basil turn ordinary scrambled eggs into something spectacular. Serve with boiled potatoes or roast some with low fat cooking spray and herbs.

    Ingredients:

    10 spray(s) Cooking Spray, Calorie Controlled
    2 medium Pepper, All Types, use red, cut into 1/4-inch-thick slices
    1 medium Pepper, All Types, use yellow, cut into 1/4-inch-thick slices
    1 medium Onion, All Types, chopped
    2 clove(s) Garlic, chopped
    225 g Tomato Purče
    4 leaf/leaves Basil, fresh, torn (plus more for garnish if desired)
    6 medium Egg, Whole, British Lion
    2 individual Egg White, British Lion
    6 portion(s) (medium) Potatoes, Old, Raw, red, uncooked, quartered, seasoned to taste and roasted

    Instructions
    Coat a large nonstick frying pan with cooking spray and heat over medium-high heat. Add peppers and onion, and cook until soft and starting to brown, stirring often, about 10 minutes; add garlic and cook 1 minute more. Add tomato puree and basil, and cook until slightly thickened, about 3 minutes more; cover and keep warm.

    Whisk eggs and egg whites together in a medium bowl. Coat another nonstick pan with cooking spray and heat over medium-high heat. Add eggs and scramble until desired doneness, about 5 to 7 minutes. To serve, place 1/4 of eggs on each of four plates and top with sauce; serve with potatoes.
    Too much of a good thing is wonderful!!!

    I like to add sauteed onion and bell pepper to mine as well. Even a diced tomato on top before I add the cheese(don't cook tomato just let it warm)
    You could use tater tots but I like to grate leftover cold baked potatoes they make the best hash browns!
